Tasting Notes
This Dolcetto is rich with aromas of dried strawberries, tar, leather, fruit leather, and plum, with hints of menthol. On the palate, you’ll find this wine to be medium to full bodied with notes of strawberry jam, plum, fresh herbs, rosemary, blueberries and dried cherries. You can certainly enjoy this wine now or age it for the next five to seven years. Because it is unfiltered, sediment may appear in the bottle with age and decanting may be necessary.

Winemaker Notes
Dolcetto, a varietal that originates from the Piedmont region of Italy is perhaps unusual to see in the Pedernales Cellars wine line-up where most of our varietals originate from the Iberian Peninsula, or from Southern France.  However, a beautiful feature of the Texas wine industry is a willingness of growers to explore with their plantings.  Dolcetto has proven to be one of those happy experiments and at low yields from the Bingham Vineyard it can become a beautiful fruit forward and food friendly wine. We have this variety in our cellar, in part, to create our Valhalla blend, however we found it to be becoming enough on it’s own that we set some aside for our Signature Series. In hopes of obtaining and maintaining the fullest expression of the fruit, this wine is un-fined and unfiltered.
Food Pairing Notes
Dolcetto is a very food friendly wine and we find it pairs nicely with anything from Sunday roasts, Cornish hens, or pork belly to roasted vegetables and brie.
